Derived from Ancient Greek, "Aoron" translates as "too early; before its time, unripe, ahead of its time."
Early Harvest: Honoring Nature's Rhythm
Choosing "Aoron" as the name for our olive oil is a poetic acknowledgment of our commitment to harvesting olives early in their lifecycle, at the optimal moment of ripeness. By doing so, we capture the vibrant flavors and nutrient-rich benefits at their peak, creating an oil that is truly ahead of its time in both taste and health benefits. Respecting nature’s rhythm and harvesting olives at the right moment—dictated by nature, not us—reflects the harmony between our dedication to regenerative practices and the ancient wisdom of early harvesting.
A later harvest, which is typically done one to two months later for most olive oils, yields a much higher quantity of oil but significantly reduces the polyphenol content. Additionally, the oil becomes milder. We have a clear preference for the bolder, fresher variant, which is far more beneficial to health.

The meaning of "Aoron" extends beyond early harvesting; it also embodies the pioneering role of regenerative agriculture. For us, there is also a personal story behind this resonant name. After a convivial dinner, we discussed our thoughts with a close relative from our village. The next morning, he returned with great excitement. His enthusiasm and deep knowledge of Ancient Greek gifted us this name suggestion. Thus, for us, this choice of name also represents respect for our relatives, ancestors, and our deep connection to this region.
